With Michelin-rated restaurants and their famous founders usually taking centre stage, it’s always refreshing to hear from the people working over time behind the scenes. Launched in Singapore in November 2025, new indie culinary zine Assistant to the Assistant Chef adopts a non-hierarchical approach, centring on conversations with professionals spanning the full ‘kitchen brigade’—from food influencers who honed their craft over lockdown, to aspiring chefs following the more traditional pipeline from commis to sous.
Inside this charmingly designed debut issue—carrying all the hallmarks of a traditional French bistro, complete with chequered table cloths and hand-scribbled recipe notes—you’ll find intimate interviews with five chefs from the zine’s native Singapore. In between talks, ATTAC also present their very own dining guide, factoring in points for ‘maura’ (‘mom aura’) and redacting points for having the ‘cleanliness vibe’—vibe being the operative word here—of a greasy spoon, and evaluate what makes an elite kitchen knife. A compact, wholesome read for seasoned insiders and curious outsiders alike.
