Narrm/Melbourne-based magazine Mince positions food as ‘a gateway to bigger conversations’ surrounding culture and the hospitality industry. Rather than feed into the algorithm-driven, engineered and inexhaustible media churn, Mince seeks out stories that feel more intentional, finding real connection through the physical medium of print. As for the name? Mince is ‘a metaphor for creative process, messy, deliberate, satisfying.’

This second edition is themed ‘The Time Capsule Issue’ and looks at food media’s obsession with novelty and trends by examining the perceived stasis of cuisine in Australia, while positioning food more widely as a nuanced ‘collection of stories, influences and perspectives unfolding across time.’

Divided into past, present, and future, readers will find features including a graveyard devoted to outdated dishes that tug at the heart strings, an homage to 1960s magazine and Australian food bible The Epicurean, a fancy egg and pep Japanese sando recipe, and a timestamped day in the life of a solo diner. Presented in a new, tall format, with an exposed spine, and accompanied throughout by playful cutout artworks and illustrations.
