New food and culture title Texture is the passion project of London-transplant and self-proclaimed ‘pickiest child you’ve ever known’ Khushi Vora. Covering ‘food, identity, and the unseen labour behind what we eat’, this small-format magazine pays homage to the multicultural fabric of city life via an exploration of local culinary culture. 

Whilst the debut issue centred on London, this second edition was conceived in Khushi’s native city of Mumbai. In the issue’s opening editorial, Khushi writes of the juxtaposition between food ‘as a form of dissent’ and ‘as a form of oppression’, observing that it’s precisely this binary that makes food an enduring political and cultural symbol. Inside, discover a collection of Koli fish recipes, including Bombay duck curry, Tuna Biryani, Koli lobster and stuffed mud crabs, alongside conversations with the likes of Niyati Rao, co-founder of new Bandra bar Bombay Daak; the Kwan Kung temple’s current custodians, the Tan family; and couple Prakriti Lama and Viraf Patel, co-founders of the Himalayan-inspired Kala Ghoda restaurant Across.
